Mya wanted to show off her whole grain waffle with Better than Cream Cheese and blueberry jam. I wanted to show you my fake-on, tofu “egg” and cheeze on quinoa bread.
Both were wonderful and filling breakfasts. My sandwich, especially since I probably won’t be eating much of this for awhile (I will explain in my next post), was super good and very reminiscent of any classic egg sandwich. I am really thinking about taking on a huge challenge for myself, the debate is on, and I am making up my mind today. I will keep you posted!
