Grilled Vegan Kabob’s over Brown Rice

Clean out the fridge and make some creative kabobs!  We had fresh peppers, onions, mushrooms. potatoes and tomatoes, and also had leftover corn and some frozen “Beefless Tips”.  Took about 1/2 hour total to plate, and 40 minutes till empty plates!  I served over steamed brown rice.
