Hi Everyone! I have been away from my blog for two weeks. I think that is the longest time that I have not updated. Daytrips and the bread business have had me a bit tied up . Now, I am back, and ready to share again. I am so glad I participate in What I Ate Wednesday to keep myself on track!
Today, I am going to share my What I Ate Wednesday meals along with other random meals and events that happened in the past two weeks!
Yesterday, had to deliver some bread samples to several potential customers, so a 4:30am trip to the bakery left us starved by 8:00am. Luckily, I saved a few bagel samples for our breakfast sandwich. I usually only indulge in these babies as a Saturday treat, but with being up so long before breakfast, and since I burned a few extra calories , I opted for a cheat breakfast. A poppy bagel, tofu egg, thinly sliced Follow Your Heart cheddar, and Tofurky Italian style deli slices. OUT OF THIS WORLD!!!!
This breakfast sandwich kept me full until well after 1:30pm. Since I was not starved at lunch, I decided to use up some garden tomatoes, basil and the frozen eggplant I had left in the freezer. I also had a half of a pack of Teese Vegan Mozzarella, which I now adore!
I made mine into a bread free lunch stack. For Andy, I used a hoagie bread sample with all the fixings!
Dinner was not so exciting. Andy and I have been trying to finish watching “The Fighter” for the past three days. Since our lunch was later than usual, I made us a snack tray instead.
Sabra garden hummus, spicy red bean chips, chopped garden tomatoes with onion and some carrots on the side.
Because this was so simple, I will share Sunday’s dinner, which I did not get to blog. Gluten Free Angel Hair Corn Pasta, and a simple sauce made from diced tomato, basil, onion, drizzle of olive oil and some finely diced Teese mozzarella. It was a sort of bruschetta style topping over the pasta. I also fried some bread on the side so it was crisp. I used some Pam olive oil spray on a hot griddle to get the bread crisp. It was delicious, we ate the entire bowl.
Now, for the other random stuff…
We took an awesome day trip to Ringing Rocks Park in Upper Black Eddy, PA. It was a was packed with gorgeous trails. Prince even came along. There is a natural boulder field with rocks that ring when tapped with a hammer or stone and there is a huge dry waterfall. It was a really remarkable. Nature is amazing!!! Then, there was the 95 degree Kimberton Fair… Mya had so much fun!

Bunnies were discovered in the garden…
Many tomatoes were consumed…
and great bonds were formed…
This is how we spent the last two weeks, now I feel caught up! I hope you have a great Wednesday!
