What I ate Wednesday (Tuesday)

Hi everyone!  I have now joined the masses to participate in “What I ate Wednesday”.  Thanks to Jenn at Peas and Crayons who hosts the WIAW, we get to take a look at someone’s day in food.  The idea is take take pictures and give a description of a whole days worth of meals, then tell about it by blog on Wednesday.  I have wanted to do this for several weeks, and every time I would forget a meal or get too busy.  So yesterday, I got a whole days meals in pics! 

Breakfast I shared yesterday, was strawberry protein pancakes and a chocolate covered strawberry or two! My portion of the pancakes (below) was less that 200 calories! They had 18 grams of protein and 7 grams of fiber.


Lunch was a Mediterranean wrap.   I used one of my favorite wraps, Flat Outs, some hummus, layers of cucumbers, radishes, tomatoes, onions, olives, mini sweet peppers, spring mix and thin grilled sliced tofu steak. It was a lunch that provided energy and really got me through the day.  All these flavors and textures really combine well, especially the hummus, it really pulls everything together nicely. High in antioxidants and fiber, overall low in calories.  This wrap was 350 calories, 29 grams of protein, and 17 grams of fiber!

Onto dinner. It was taco Tuesday! Any celebration meal, Andy wants tacos. So, for Valentines, I made him his favorite, of course!  I used some TVP and Azuki Beans with spicy taco seasoning for a taco filling.  The topping included, tomatoes, avocado, olives, shredded vegan cheddar, shredded spring mix, cilantro (for me), vegan sour cream, and Trader Joe’s Salsa.  I have to admit, since taco shells are not really on my diet plan, I only ate one shell and had one in a Trader Joe’s reduced carb wheat tortilla. Andy was very satisfied, Mya thought they were too spicy, and I enjoyed every bite.

The total for both my tacos, soft and hard shell, with all the fixings was 374 calories, 17 grams protein, and 15 grams fiber.

Dessert… Chocolate Covered Strawberries! My chocolate covered strawberries were about 40 calories each.  I had 3 yesterday.

    1. Thanks Kimberly! It was pink sprinkles to celebrate Valentine's Day! Although, salt would probably be good too...Pink Himalayan Salt...yum.

    1. Awe, thanks. I love making wraps. This one was Flat-outs Light Tomato. Only 90 calories, 9 grams of fiber and 9 grams of protein! That is one impressive wrap.

  4. That wrap looks awesome. Mine never look that good ... they always fall apart!

    1. For the Flat out wraps, I find it is best to roll them up tight, like a jelly roll, leaving a little space at the end. Once they are rolled, I cut them in half so they are two easy to eat pieces that do not fall apart.

  7. Hi,
    For the taco filling, I re-hydrated 1 cup dried TVP in 1 cup boiling water. This creates the "meat" granules or crumbles that are ready to be flavored. I heated up a skillet with 1 tsp. olive oil, then added minced onions, when they began to soften, I added the tvp and 1 cup rinsed and drained azuki beans. This gives it a ton of protein and fiber. To that I mixed in some water and taco seasoning. I let it cook a few minutes until everything was heated through and well coated. Now you can stuff a taco or burrito with the mixture.
