“Toona” Sandwich

A fresh whole wheat roll from the bakery was a perfect match for my “toona”.  I used TPV (textured vegetable protein) for my tuna.  Then I added all the usual suspects; vegan mayo, relish, onion, dill, celery, salt and pepper.  It came together fabulously.  I still had a big juicy garden tomato that was perfectly ripe.  I cut really thick slices.  Romaine was on top.  I served some spicy red bean chips on the side.  It has been 5 hours and I am barely hungry yet.
